You know what’s really making me unhappy right now? My laptop is off at the Macbook Hospital. I’ve been having some t typing issues for a couple of weeks and it’s only gotten progressively worse until it finally gave out. I rushed to the Apple Store this weekend and, after diagnosing it with “broken touchpad”, they sent it off to get fixed. Thank goodness for AppleCare, right?

Despite my computer issues (and thus very little posting lately–though I promise to get back to it FULL FORCE when my healed baby comes back from the repaid shop), I have a few things that I am super excited for this Spring. Since tomorrow is the first day of Spring (yay!), I thought I’d share some of them–while I have access at a friend’s. There are some amazing things about the Spring and these are mine.

1. My favorite book is being turned into a movie! Yes, I’m talking about The Hunger Games. If you haven’t seen the posters or heard about it, you’re probably living under a rock. I’m super excited to go see the movie ON MY BIRTHDAY this year. It’s being released this Friday and it just so happens that my Birthday is Thursday. So, guess what I’ll be doing?! After a nice dinner with friends, a bunch of us are heading straight to the theater for the midnight showing. I don’t think I could possibly be more excited for this (in fact, I’m quickly rereading the book before the movie comes out!) but what I’m even more excited about is that, after a few months of very little reading, I’ve bought some awesome ebooks for my iPad and made the commitment to end my days with at least 30 minutes of reading. I love reading but I sometimes get distracted by my TV. But there’s no reason why I can’t find a better balance, right? Starting with tonight.

2. Warmer weather means flowers and running outside! I caught a picture of these gorgeous daffodils in my neighborhood. Aren’t they oh-so-pretty? It’s been really insanely warm weather lately in NYC. After a pretty mild winter, I feel like Spring started full force, which is nice because last year we pretty much went from frigid cold to steaming hot. I love the Spring, though,  because I can wear a light jacket and not be subjected to sweating in the subways. Even better, though, I’m finally getting back to running! Yes, I did the New Year’s Eve Emerald Nuts Midnight Run and the Cupid’s Undie Run for charity but I haven’t done much more than that. Now that it’s warmer, though, my plan is to start running 3 days a week plus biking to work a few times a week.

3. Being able to afford some new clothes for Spring, thanks to my new job! I have to admit, last year was kind of tough financially. I loved my job and especially all of my old coworkers, but I am definitely very happy to have some more dough in my pocket thanks to my new gig. I’m pretty obsessed with all of the beautiful colors that are hitting the shelves this year, too, so it’s nice to be able to buy a few of the pieces I’m admiring. As I learn to build confidence and dress for my body type ever since my weight loss surgery, I’ve been able to embrace my love of fashion and show off my curves a bit. And I can’t wait to do it in some brightly colored pants this year.

4. I’m continuing my battle to eat more veggies–by realizing I have an eating disorder. I’ve talked here about how I was always a vegetable hater as a child and just how difficult it’s been to eat more vegetables ever since losing the weight. But what I never knew is that my pickiness (and my phobia-like fear when it comes to trying new veggies) could actually be Selective Eating Disorder. Honestly, I didn’t know this existed. I don’t think a lot of people do but, now that I know it, I am even more enthusiastic about pushing myself to overcome this issue. In fact, I’ll be launching a new Challenge very soon that will be dealing with this head on. It’s one that I think many of you will love–almost as much as I have discovered that I love Brussels sprouts after going my entire life without trying them.

5. I’ll finally be launching my health coaching business! Well, I graduated from the Institute of Integrative Nutrition at the end of last year and am still having an amazing time going to the IIN Conferences, but I honestly just haven’t had the time to fully focus on launching a business. I really want to help others make healthier choices (and learn from my mistakes) and I feel that I’m really ready to do that now. I’ll be focusing on helping people who have lost, or need to lose, a significant amount of weight (50+ pounds) and need to keep it off. Stay tuned for my official announcement later on this season!

Saying all of these things out loud (well, writing them down, anyway) makes me even more excited for everything that’s to come. You’ll have to bear with me while my laptop is still in the shop because it may be quiet for another few days (or up to a week), but I am so psyched for everything that’s coming. It’s really going to be an awesome year.

I really love quinoa for a nice, hearty meal once in a while. I think it’s one of the easiest grains to make and it’s a big win because it’s gluten-free and full of protein. That’s the main reason why I keep eating it so much, making mushroom quinoa risotto, quinoa jambalaya, quinoa-stuffed tomatoes and tri-color veggie quinoa. But sometimes I like just having a simple quinoa dish on the side, with something else.

Egg White & Veggie Quinoa

That’s how I came up with this idea for an egg white and vegetable quinoa mix. On a whim, I had done something similar for breakfast one day. I just added eggs to some quinoa that I had leftover from dinner the night before but it wasn’t enough for another dinner. That’s how I discovered that adding eggs (or, in this case, egg whites) to quinoa could really make them stand out.

The egg whites really make this dish super creamy and delicious. But the other really nice thing is adding in whatever vegetables I happen to have in the house. When I made this one, I had bought a pint of cherry tomatoes because a) I love them and b) I knew I could find something to do with them. Then I looked at some of the veggies in my freezer and found some simple green peas. That’s all I needed to make this almost-like-Christmas looking meal. It made a really amazing side dish for whatever else I wanted, like some of papi’s fried shark or mom’s easy turkey. Whatever it’s served with, though, this is one delicious dish.

Egg White & Veggie Quinoa

Egg White & Veggie Quinoa
Yield: 4 (as a side dish); Prep: 5 minutes; Cook: 25 minutes

An easy way to make quinoa creamier is by adding egg whites to this delicious side-dish. Throw in a few vegetables that you have on hand and it’s the perfect compliment to any meal.

Ingredients:

  • 1 cup quinoa
  • 1 cup egg whites
  • 1 pint grape tomatoes, halved
  • 1 cup frozen peas

Directions: 

  1. In a small pot, set 2 cups of water to boil. Put in your quinoa, lower to a simmer and cover.
  2. When the quinoa is done (about 20 minutes), pour in the egg whites and vegetables.
  3. Stir for about 5 minutes, or until the egg whites are fully cooked. Then just serve.
